Autumn is getting closer and at the same time the need to be spoiled. So...Prepare a chocolate chips muffin for your breakast. It is so easy. Just google muffin and you get million of receipts. I used the following one but, instead of normal flour I used rice one. Then I didn't use brown sugar but only white. Instead of oil I used butter. Anyway result was great, in terms of taste. The only thing to improve is to be careful when you add the chocolate chips. It is important to mix the chips with some flour before including them into the mixture, otherwise while they cook they deposit themselves on the base of the pastry!
Ah, I forgot: I also included in the mixture a couple of spoon of cream chocolate (like Nutella), but in my case I used a superior quality of dark chocolate (Manlio brand, from Puglia region)!
Ingredients (6 medium muffins)
- 2 cups all-purpose flour
- 1/2 cup white sugar
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 3/4 cup milk
- 1/3 cup vegetable oil
- 1/2 egg
- 3/4 cup chocolate chips
- 3 tablespoons white sugar
- 2 tablespoons brown sugar
- Heat oven to 180 degrees.
- In a medium bowl, combine flour, 1/2 cup sugar, baking powder, chocolate chips, and salt; mix well. In a small bowl, combine milk, oil and egg; blend well. Add dry ingredients all at once and stir.
- Fill cups 2/3 full. Sprinkle tops of muffins before baking with a combination of 3 tablespoons sugar and 2 tablespoon brown sugar.
- Bake for 20 to 25 minutes!!!!!
