If you love muffins, try also saulty versions. I don't know why but I have always thought about muffins as something sweet, the typical pastry for an anglo-irish breakfast. Well, muffins are also a great solution as appetizers, for apertif, instead of bread or, why not, for a saulty-sweety Sunday brunch.
So, try this version. Cut into slices 4/5 onions (preferably white) and brown them in a pan with some olive oil.
In the meanwhile, in a bowl, mix the eggs (2) with some greek yoghurt (150 gr) and add sault and black pepper. After that, add flour (120 gr) and baking powder and continue to stir until you get a smooth mixture. Next step is to include as well the onions and some cheese that you have finely cut into small cubes.
If you want to get something more "punchy", add also some cubes of bacon.
Cook in the oven (180-200 degrees) for 25/30 minutes and then the muffins will be ready to be served or, better, eaten!
